Ingredients

  • 1 cup cooked brown rice
  • 1 small sweet potato, sliced
  • 1/2 block firm tofu, cut into cubes
  • 1 cup broccoli florets
  • 1/4 cup soy sauce
  • 2 tbsp maple syrup
  • 1 tbsp olive oil
  • 1 tsp sesame oil
  • 1 garlic clove, minced
  • 1 tsp grated ginger
  • 1 tbsp sesame seeds
  • Fresh coriander for garnish

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Toss the sweet potato slices and broccoli florets in olive oil and a pinch of salt. Spread on a baking sheet and bake for 20-25 minutes until tender.
  3. Heat sesame oil in a pan, add tofu cubes. Cook until all sides are golden brown.
  4. In a small bowl, mix soy sauce, maple syrup, garlic, and ginger. Pour over the tofu and cook for another 5 minutes, allowing it to caramelize.
  5. Assemble the bento: Place cooked rice at the bottom of the box, arrange caramelized tofu, sweet potatoes, and broccoli. Sprinkle with sesame seeds and fresh coriander.
