Chilled Millet Salad with Spiced Chickpeas

Ingredients
- 1 cup Millet
- 2 cups Water
- 1 can Chickpeas, drained and rinsed
- 1 teaspoon Cumin
- 1/2 teaspoon Cayenne Pepper
- 1 Red Bell Pepper, diced
- 1 Cucumber, diced
- A handful of Fresh Coriander, chopped
- Juice of one Lemon
- Salt to taste
- Extra Virgin Olive Oil
Instructions
- Rinse the millet under cold water and drain.
- In a pot, bring the water to a boil. Add the millet and simmer for 15-20 minutes until tender. Once cooked, let it cool.
- In a pan, heat some oil over medium heat. Add the chickpeas, cumin, and cayenne pepper. Cook for 5-7 minutes until the chickpeas are crispy and the spices are fragrant.
- In a large bowl, combine the chilled millet, spiced chickpeas, red bell pepper, cucumber, and fresh coriander.
- Drizzle with lemon juice and olive oil. Season with salt to taste. Toss everything together until well combined.
