Ingredients
- 1 cup sushi rice
- 1 1/4 cups water
- 2 tbsp rice vinegar

- 1 ripe mango, peeled and sliced into strips

- 4 sheets nori (seaweed)

Instructions
- Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions.
- While the rice is cooking, mix the rice vinegar, sugar, and salt in a small bowl until the sugar dissolves.
- Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.
