  • 1 cup millet
  • 2 cups vegetable broth
  • 1 sweet potato, cubed
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a roasting tray, toss sweet potato, zucchini, bell pepper, and onion with olive oil, cumin, paprika, salt, and pepper.
