  • 2 cups vegetable broth
  • 1 large sweet potato, peeled and cubed
  • 1 cup chopped kale
  • 1 red bell pepper, diced
  • 1 can chickpeas, drained and rinsed
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp ground cinnamon
  • 1/2 tsp turmeric
  • 2 tbsp tomato paste
  • 1 tbsp peanut butter
  • Salt and pepper to taste

Instructions

  • Heat the olive oil in a large pot over medium heat.

  • Stir in the kale and continue to simmer until the sweet potatoes are tender and the stew has thickened.
