Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1 cup cooked quinoa
  • 1/2 cup finely chopped red onions
  • 2 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1/4 cup fresh cilantro, chopped
  • Salt to taste
  • 2 tablespoons coconut oil
  • 1/4 cup ground flaxseeds mixed with 1/2 cup water (flax egg)
  • 1 cup gluten-free breadcrumbs

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil the sweet potatoes until soft, about 15 minutes. Drain and let them cool.
  3. In a large bowl, mash the sweet potatoes.
  4. Add the cooked quinoa, red onions, garlic, ginger, cumin, paprika, cayenne, cilantro, and salt to the mashed sweet potatoes. Mix until well combined.
  5. Stir in the flax egg to bind the mixture.
  6. Form the mixture into small balls, about the size of a golf ball.
  7. Roll each ball in breadcrumbs until fully coated.
  8. Heat coconut oil in a pan over medium heat and fry each ball until golden brown, or bake in the preheated oven for 20-25 minutes until crispy.
  9. Serve hot with a dipping sauce of your choice.
