Ingredients
- 2 large sweet potatoes, peeled and cubed
- 1 cup cooked quinoa
- 1/2 cup finely chopped red onions
- 2 cloves garlic, minced
- 1 tablespoon freshly grated ginger

- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (adjust to taste)
- 1/4 cup fresh cilantro, chopped

- 2 tablespoons coconut oil
- 1/4 cup ground flaxseeds mixed with 1/2 cup water (flax egg)
- 1 cup gluten-free breadcrumbs
Instructions
- Preheat your oven to 375°F (190°C).
- Boil the sweet potatoes until soft, about 15 minutes. Drain and let them cool.
- In a large bowl, mash the sweet potatoes.
- Add the cooked quinoa, red onions, garlic, ginger, cumin, paprika, cayenne, cilantro, and salt to the mashed sweet potatoes. Mix until well combined.
