  • 2 carrots, grated

Instructions

  3. Add grated carrots and mushrooms to the skillet, cook until softened.
  4. Stir in the curry powder, turmeric, cinnamon, and ground cloves, cooking for another minute until fragrant.
  5. Mix in the cooked lentils, chutney, apricot jam, raisins, and almonds, and season with salt and pepper.
  6. In a small bowl, combine almond milk and apple cider vinegar, then stir into the skillet mixture.
  7. Transfer the mixture to a greased baking dish, and sprinkle breadcrumbs evenly over the top.
  8. Bake in the preheated oven for about 30 minutes, or until the top is golden and crisp.
