- 1/4 cup nutritional yeast
- 1 tbsp soy sauce
- 1 tbsp lemon juice
- 1/2 tsp turmeric (for color)
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté until soft.
- Add zucchini and bell pepper to the skillet. Cook until they begin to soften.
- Stir in cherry tomatoes, olives, artichoke hearts, basil, oregano, salt, and pepper. Cook for another 5 minutes, then remove from heat.
- In a blender, combine tofu, nutritional yeast, soy sauce, lemon juice, and turmeric. Blend until smooth.
- Combine the tofu mixture with the sautéed vegetables. Adjust seasoning if needed.
- Pour the filling into the pie crust, spreading evenly.
