Ingredients

  • 1 vegan pie crust (store-bought or homemade)
  • 1 tbsp olive oil
  • 1 red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 zucchini, sliced
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup kalamata olives, pitted and sliced
  • 1/2 cup artichoke hearts, chopped
  • 1/4 cup fresh basil, chopped
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • 1 block (14 oz) firm tofu, drained and pressed
  • 1/4 cup nutritional yeast
  • 1 tbsp soy sauce
  • 1 tbsp lemon juice
  • 1/2 tsp turmeric (for color)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté until soft.
  3. Add zucchini and bell pepper to the skillet. Cook until they begin to soften.
  4. Stir in cherry tomatoes, olives, artichoke hearts, basil, oregano, salt, and pepper. Cook for another 5 minutes, then remove from heat.
  5. In a blender, combine tofu, nutritional yeast, soy sauce, lemon juice, and turmeric. Blend until smooth.
  6. Combine the tofu mixture with the sautéed vegetables. Adjust seasoning if needed.
  7. Pour the filling into the pie crust, spreading evenly.
  8. Bake in the preheated oven for 35-40 minutes, or until the top is golden and the filling is set.
  9. Allow to cool for 10 minutes before slicing. Serve warm.
