  • 3 ripe pears, peeled, cored, and sliced
  • 2 cups all-purpose flour

  • 1/2 cup brown sugar
  • 1/2 cup vegan butter, melted
  • 1 cup almond milk
  • 1/4 cup crystallized ginger, finely chopped
  • 2 teaspoons baking powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon salt
  • For the syrup:
    • 1/2 cup water
    • 1/2 cup granulated sugar
    • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch cake pan.
  2. Arrange the sliced pears at the bottom of the pan.
  3. In a mixing bowl, combine flour, sugar, brown sugar, ground ginger, baking powder, and salt.
  4. In another bowl, mix the melted vegan butter with almond milk.
  5. Combine the wet and dry ingredients until just mixed. Fold in the crystallized ginger.
  6. Pour the batter over the pears in the cake pan.
  7. Bake for 45 minutes or until a toothpick inserted comes out clean.
  8. While the cake is baking, prepare the syrup by combining water, sugar, and lemon juice in a small saucepan. Bring to a boil, then reduce heat and simmer until thickened.
  9. Once the cake is done, remove from oven and immediately pour the warm syrup over the hot cake.
  10. Allow the cake to cool in the pan for about 20 minutes before inverting onto a plate to serve.
