Introduction

Ingredients

  • 12 large cremini or portobello mushrooms, stems removed
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup vegan cream cheese
  • 1/4 cup vegan parmesan, grated
  • 1/4 cup breadcrumbs
  • 1 tablespoon nutritional yeast
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Carefully remove the stems from the mushrooms and finely chop them.
  3. Heat olive oil in a pan over medium heat. Sauté the onion and garlic until soft and translucent.
  4. Add the chopped mushroom stems to the pan and cook until they are soft.
  5. Remove from heat and stir in the vegan cream cheese, vegan parmesan, breadcrumbs, nutritional yeast, and smoked paprika. Season with salt and pepper to taste.
  6. Fill each mushroom cap generously with the filling.
  7. Place the stuffed mushrooms on a baking sheet and bake for 20 minutes, or until the mushrooms are tender and the tops are golden brown.
  8. Garnish with chopped fresh parsley before serving.
