Hiroshi's Quick Vegan Sushi Roll

Ingredients
- 1 cup sushi rice,
- 2 cups water,
- 2 tbsp rice vinegar,
- 1 tbsp sugar,
- 1/2 tsp salt,
- 4 sheets nori (seaweed),
- 200g firm tofu,
- 1 cucumber,
- 1 avocado,
- 1 carrot,
- Soy sauce (for serving)
Instructions
- Rinse the sushi rice under cold water until the water runs clear. Put the rice and water in a medium saucepan. Bring to a boil, then reduce the heat to low, cover and cook for 20 minutes. Let it cool. Mix in the rice vinegar, sugar, and salt.
- Slice the tofu, cucumber, avocado, and carrot into thin strips.
- Place a sheet of nori on a sushi mat. Spread a thin layer of the sushi rice on the nori. Leave a small gap at the top of the sheet.
- Lay the tofu, cucumber, avocado, and carrot on the rice. Roll the sushi tightly using the mat. 5. Slice the roll into bite-size pieces. Serve with soy sauce.
