Ingredients

  • 1 cup basmati rice
  • 2 cups vegetable broth
  • 1 tablespoon coconut oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper
  • 1 can (14 ounces) diced tomatoes
  • 1 cup frozen okra
  • 1 cup cooked black-eyed peas
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear. Set aside.
  2. In a large pot, heat the coconut oil over medium heat. Add the diced onion and minced garlic, and sauté until fragrant and translucent.
  3. Add the diced bell peppers to the pot and cook until they start to soften.
  4. Stir in the ground cumin, paprika, turmeric, and cayenne pepper. Cook for another minute to toast the spices.
  5. Add the rinsed basmati rice to the pot and stir to coat it with the spices.

  7. Reduce the heat to low, cover the pot with a lid, and let the rice simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  8. Stir in the frozen okra and cooked black-eyed peas. Cook for an additional 5 minutes, or until the okra is tender.
  9. Season with salt and pepper to taste.
  10. Serve the vegan West African side dish hot, garnished with fresh cilantro.
