Introduction

Today's recipe is a hearty and comforting African-inspired Spicy Peanut and Sweet Potato Soup. This soup combines the creaminess of sweet potatoes with the rich, nutty flavor of peanuts, and a kick of African spices to warm you up on any chilly day.

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 4 large sweet potatoes, peeled and diced
  • 6 cups vegetable broth
  • 1 cup natural peanut butter
  • Salt and black pepper to taste
  • Fresh cilantro for garnish
  • Crushed peanuts for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion, and cook until soft and translucent, about 5 minutes.
  3. Stir in the garlic, ginger, cumin, paprika, and cayenne pepper, and cook for another 2 minutes until fragrant.
  4. Add the diced sweet potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until the sweet potatoes are tender, about 20 minutes.
  5. Use an immersion blender to puree the soup until smooth.
  6. Stir in the peanut butter, and continue to simmer for 5 minutes. Season with salt and black pepper to taste.
  7. Serve the soup hot, garnished with fresh cilantro and crushed peanuts.
