Ingredients

  • 1 cup of cooked millet
  • 1/2 cup of diced sweet potatoes
  • 1 cup of chopped kale
  • 1/4 cup of cooked black beans
  • 1/4 teaspoon of smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
  • 1 diced red onion
  • 2 cloves of garlic, minced
  • 1/2 teaspoon of ground turmeric
  • 1/4 cup of fresh parsley, chopped
  • Juice of one lemon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the sweet potatoes with 1 tablespoon of olive oil, smoked paprika, salt, and pepper. Roast in the oven for about 25 minutes, or until tender and slightly caramelized.
