  • 1 large red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 cup diced sweet potatoes
  • 1 cup diced butternut squash
  • 1 can (400ml) coconut milk
  • 1 cup chopped kale
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  • Rinse the sorghum grain and cook it in water until tender, about 50-60 minutes.
  • In a large pan, heat the olive oil and add cumin and coriander seeds until they start to pop.
