Ingredients

  • 2 slices of artisan whole grain bread
  • 1 tablespoon of vegan butter
  • 2 tablespoons of cashew cheese spread
  • 1/4 avocado, sliced
  • 2 slices of tomato
  • A handful of arugula
  • 2 tablespoons of caramelized onions
  • 1 tablespoon of vegan mayonnaise
  • 1 teaspoon of Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Spread vegan butter on one side of each bread slice.
  2. Heat a pan over medium heat and place the bread slices, buttered side down, on the pan.
  3. On one slice of bread, spread the cashew cheese evenly.
  4. Layer the sliced avocado, tomato slices, and arugula on top of the cashew cheese.
  5. Add the caramelized onions over the arugula.
  6. In a small bowl, mix the vegan mayonnaise and Dijon mustard. Spread this mixture on the other slice of bread.
  7. Season with salt and pepper.
  8. Close the sandwich with the other slice of bread, mayonnaise side facing down.
  9. Press down lightly and grill on the pan for about 2 minutes on each side or until golden brown.
  10. Remove from pan, slice in half, and serve warm.
