  • In a medium pot, bring the millet and water to a boil. Reduce heat to low, cover, and simmer until all water is absorbed, about 20 minutes.
  • While the millet cooks, heat a large pan over medium heat. Add a splash of water and sauté the onion and garlic until translucent.
  • Add the sweet potatoes, bell peppers, turmeric, cumin, and smoked paprika. Cook for about 10 minutes, or until the vegetables start to soften.
  • Stir in the apple cider vinegar and tomato paste. Cook for another 5 minutes.
