Ingredients

  • 1 cup millet
  • 1 cup sorghum
  • 2 cups vegetable broth
  • 1 large sweet potato, cubed
  • 1 can chickpeas, drained and rinsed
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp turmeric
  • 2 tbsp tomato paste
  • 1 bunch collard greens, chopped
  • 2 tbsp peanut butter
  • Salt and pepper to taste
  • Fresh coriander, for garnish
  • Lime wedges, to serve

Instructions

  • Rinse millet and sorghum thoroughly under running water.
  • In a large pot, bring vegetable broth to a boil. Add millet and sorghum, reduce heat to low, cover, and simmer until grains are tender, about 45 minutes.
  • While grains cook, heat a large skillet over medium heat. Add a splash of water, and sauté onion, garlic, and bell peppers until softened, about 5 minutes.
  • Add sweet potato, cumin, paprika, and turmeric. Cook for another 10 minutes, stirring occasionally.
  • Stir in tomato paste, chickpeas, and a little water if needed, allowing the mixture to simmer until the sweet potatoes are tender.
  • Add collard greens and peanut butter. Stir well to combine. Season with salt and pepper. Cook until greens are wilted and everything is heated through.
  • Serve the cooked grains topped with the vegetable and chickpea mixture. Garnish with fresh coriander and serve with lime wedges on the side.
