Ingredients

  • 200g seitan, thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp maple syrup
  • 1 tsp five-spice powder
  • 1 tbsp olive oil
  • 2 plums, pitted and finely chopped
  • 1 small piece ginger, grated
  • 1 clove garlic, minced
  • 2 tbsp brown sugar
  • 1 tsp rice vinegar
  • 1/2 tsp ground cinnamon
  • Salt and pepper to taste
  • Fresh coriander, for garnish
  • Steamed rice, to serve

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. In a bowl, mix soy sauce, hoisin sauce, maple syrup, and five-spice powder. Add the seitan slices and marinate for at least 30 minutes.
  3. Heat olive oil in a pan over medium heat. Add marinated seitan and cook until crispy, about 5 minutes per side.
  4. For the sauce, combine plums, ginger, garlic, brown sugar, rice vinegar, cinnamon, salt, and pepper in a saucepan. Bring to a simmer and cook until the sauce thickens, about 10 minutes.
  5. Place the cooked seitan on a baking sheet, brush with some of the plum sauce, and bake in the oven for 10 minutes to glaze.
  6. Serve the glazed 'duck' over steamed rice, topped with the remaining spiced plum sauce and garnished with fresh coriander.
