The Coastline Njahi & Berbere Burger

Habari! Today I am bringing the salt of the Indian Ocean and the warmth of my charcoal jiko to your table with a burger that bridges tradition and modern gourmet flair. This isn't just a meal; it is a journey from the highland bean fields to the spice-scented streets of Old Town Mombasa. We take the humble njahi—our black bean of strength—and elevate it with the fiery soul of berbere and the sweetness of coastal mango. This is how we celebrate the bounty of Kenya in a single, delicate bite.

- In a large bowl, combine the mashed njahi beans, crushed groundnuts, diced onion, garlic, berbere spice, and tamarind paste. Mix well until the spices are evenly distributed.
- Fold in the flax egg and breadcrumbs. Shape the mixture into four thick, firm patties. Let them rest in the fridge for 20 minutes to set.
- While the patties rest, prepare the kachumbari by tossing the mango, tomato, the second red onion, cilantro, lime juice, and minced pilipili chiles in a small bowl. Set aside to let the flavors meld.
- Lightly sauté the shredded sukuma wiki in a pan with a drop of coconut oil and a pinch of salt just until wilted but still bright green.
- Heat a cast-iron skillet or tava over medium-high heat. Sear the njahi patties for 4-5 minutes per side until a deep, dark crust forms, reminiscent of the char from a jiko.
- Toast the cardamom buns until golden.
- To assemble, spread a generous spoonful of the zesty coconut cream on the bottom bun. Layer the sautéed sukuma wiki, followed by the njahi patty.
- Top with a mountain of the mango kachumbari and place the top bun on gently.
- Serve immediately while the patty is hot and the kachumbari is cool and crisp.
