  • 2 slices of artisan bread
  • 2 tbsp vegan butter
  • 4 slices of smoked tempeh
  • 1/2 avocado, sliced
  • 1/4 red onion, thinly sliced

  • 2 tbsp vegan mayonnaise
  • 1 tbsp Dijon mustard
  • 1 handful of arugula
  • Salt and pepper to taste

Instructions

  3. Spread the remaining vegan butter on the slices of bread and toast them in the skillet until golden.
  4. Spread vegan mayonnaise and Dijon mustard on one slice of bread.
  5. Layer the crispy tempeh, sliced avocado, red onion, and cucumber on the bread.
  6. Top with a handful of arugula and season with salt and pepper.
  7. Close the sandwich with the other slice of bread, press down slightly, and cut in half.
