Ingredients

  • 1 cup sorghum grains
  • 3 cups water
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/4 tsp cinnamon
  • 1 large carrot, diced
  • 1 red bell pepper, diced
  • 1 can (400g) diced tomatoes
  • 1 can (400g) chickpeas, drained
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish
  • For the vegan balls:
  • 1 cup cooked black beans, mashed
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1 clove garlic, minced
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • Oil, for frying

Instructions

  • Rinse the sorghum grains and add to a pot with 3 cups of water. Bring to a boil, then reduce heat and simmer for 45-50 minutes until tender.
  • While the sorghum cooks, heat olive oil in a large pan over medium heat. Add onion and garlic, and sauté until translucent.
  • Stir in cumin, paprika, turmeric, and cinnamon, and cook for a minute until fragrant.
  • Add the carrot and bell pepper, and cook for another 5 minutes.
  • Pour in the diced tomatoes and chickpeas, season with salt and pepper, and let the stew simmer for 20 minutes.
  • For the vegan balls, combine all ingredients in a bowl and form into small balls.
  • Heat oil in a skillet and fry the balls until golden all around.
  • Serve the cooked sorghum topped with the stew and vegan balls. Garnish with fresh cilantro.
