Sorghum Stew with Spiced Vegan Balls

- 1 cup sorghum grains

- For the vegan balls:
- 1 cup cooked black beans, mashed
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 1 clove garlic, minced
- 1 tsp smoked paprika
- Salt and pepper, to taste
- Oil, for frying
Instructions
- Rinse the sorghum grains and add to a pot with 3 cups of water. Bring to a boil, then reduce heat and simmer for 45-50 minutes until tender.
- While the sorghum cooks, heat olive oil in a large pan over medium heat. Add onion and garlic, and sauté until translucent.
- Stir in cumin, paprika, turmeric, and cinnamon, and cook for a minute until fragrant.
- Add the carrot and bell pepper, and cook for another 5 minutes.
- Pour in the diced tomatoes and chickpeas, season with salt and pepper, and let the stew simmer for 20 minutes.
- For the vegan balls, combine all ingredients in a bowl and form into small balls.
- Heat oil in a skillet and fry the balls until golden all around.
