Ingredients

  • Nori sheets
  • 1 cup sushi rice
  • 1 1/2 cups water
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1 block firm tofu, marinated and baked
  • 1/2 cucumber, julienned
  • 1 carrot, julienned
  • 1 avocado, sliced
  • 1/2 red bell pepper, julienned
  • Soy sauce, for serving
  • Pickled ginger, for serving
  • Wasabi, for serving

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Combine the washed rice and 1 1/2 cups of water in a rice cooker and cook according to the manufacturer's instructions.
  3. Once the rice is cooked, mix in rice vinegar, sugar, and salt while it is still warm.
  4. Allow the rice to cool to room temperature before assembling the sushi.
  5. Place a nori sheet on a bamboo sushi mat.
  6. Evenly spread a thin layer of sushi rice over the nori, leaving about an inch uncovered at the top.
  7. Arrange strips of marinated tofu, cucumber, carrot, avocado, and red bell pepper along the bottom edge of the rice-covered nori.
  8. Carefully roll the sushi using the mat, pressing lightly to keep everything in place.
  9. Slice the sushi roll into 6-8 pieces using a sharp, wet knife.
  10. Serve with soy sauce, pickled ginger, and wasabi.
