We are taking the classic creamy comfort of horchata but elevating it with the smoky sweetness of apricots charred over almond wood and the bright, lemony lift of fresh verbena from the garden. It is fragrant, cooling, and pure California soul in a glass.

  1. In a large glass jar, combine the rice, toasted almonds, cinnamon stick, and 2 cups of the filtered water. Cover and let soak in the refrigerator for at least 8 hours or overnight.
  2. Heat a cast-iron grill pan over high heat. Place the apricot halves cut-side down and sear until deeply charred and caramelized, about 3-4 minutes.
  3. Remove the cinnamon stick from the soaking rice mixture and discard.
  4. Pour the rice, almonds, and their soaking liquid into a high-speed blender. Add the charred apricots (reserve two halves for garnish), agave, lemon zest, and the remaining cup of water.
  5. Blend on the highest setting for 2 minutes until the mixture is as smooth as possible.
  6. Strain the liquid through a fine-mesh sieve or a nut milk bag into a clean pitcher, pressing to extract all the creamy nectar.
  7. Whisk in the smoked sea salt and the finely chopped lemon verbena.
  8. Serve in chilled glasses over plenty of ice. Garnish each glass with a thin slice of the remaining charred apricot and an extra leaf of verbena.
