  2. Blanch the mushroom slices for exactly 2 minutes until they become slightly translucent but maintain a firm, chewy bite.

  4. In a small clay bowl, whisk together the tamarind concentrate, lime juice, coconut aminos, and minced pilipili to create the coastal ponzu.
