Sahari Airy Coconut and Moringa Broth

Introduction

Jambo! I'm Nia, and today I’m inviting you to experience the 'airy' side of African cuisine. Inspired by the light, frothy textures trending in modern global gastronomy, I’ve crafted a soup that bridges the gap between the coastal flavors of Kenya and the delicate soup traditions of East Asia. This Sahari Airy Coconut and Moringa Broth is an ethereal, foam-topped delight that uses the 'miracle tree' Moringa for a nutrient-packed, vibrant green finish that’s as light as a cloud.

Ingredients

  • 2 cups fresh Moringa leaves (or 2 tablespoons organic Moringa powder)
  • 1 can (400ml) light organic coconut milk
  • 3 cups vegetable dashi or low-sodium vegetable stock
  • 1 stalk lemongrass, bruised and finely minced
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 small shallot, finely diced
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon lime juice
  • 1/2 teaspoon bird's eye chili, finely chopped (optional for heat)
  • Sea salt to taste
  • Microgreens and toasted sesame seeds for garnish

Instructions

  • Heat the toasted sesame oil in a deep pot over medium heat and sauté the shallot, ginger, garlic, and lemongrass until fragrant but not browned.
  • Pour in the vegetable stock and the light coconut milk, bringing the mixture to a gentle simmer for about 10 minutes to infuse the aromatics.
  • Stir in the Moringa leaves (or powder) and the bird's eye chili, cooking for just 2-3 minutes to preserve the bright green color and delicate nutrients.
  • Remove the pot from heat and stir in the fresh lime juice and sea salt.
  • Using high-speed immersion blender, blend the soup on the highest setting, tilting the blender slightly to incorporate air until a thick, frothy foam forms on the surface.
  • Carefully ladle the warm liquid into shallow bowls, ensuring each serving gets a generous topping of the light Moringa-coconut foam.
  • Garnish with microgreens and a sprinkle of toasted sesame seeds to complete the Afro-Asian aesthetic.

This soup is a testament to how traditional African ingredients like Moringa and coconut can be reimagined into something sophisticated and light. It’s perfect as a starter for a fusion dinner or a restorative midday pick-me-up. I hope this bowl brings a bit of Kenyan sunshine and modern flair to your table. Asante sana!

Nia
