Swahili Coast Spiked Bento

Hujambo! Today I am bringing the warmth of the Mombasa sun to your lunch hour with a dish that bridges the gap between traditional Swahili slow-cooking and the modern pace of life. This bento box is a journey from the red soils of the highlands to the salty Indian Ocean breeze, featuring bold njahi beans and tangy tamarind spikes that dance on the tongue. It is a vibrant, portable feast designed to nourish the soul and spark the senses.

- Drain the soaked njahi beans and place them in a clay pot or heavy saucepan with enough water to cover. Simmer until tender but not mushy.
- Drain the excess water from the beans and stir in 1 cup of coconut milk, the berbere spice, and half of the diced onions. Simmer on low heat until the sauce is thick and coats the beans beautifully.
- In a separate pot, combine the rice, crushed cardamom pods, remaining coconut milk, and a pinch of salt. Cook until the rice is fluffy and smells of the spice trade winds.
- Steam the green banana cubes until they are fork-tender. While still hot, toss them in a bowl with the tamarind concentrate, one minced pilipili, and a squeeze of lime juice.
- Create a fresh kachumbari by mixing the remaining onions, tomatoes, cilantro, and the second pilipili. Season with lime juice and salt.
- Arrange the bento box by placing the cardamom coconut rice in the main section. Top with the rich njahi stew and a generous sprinkle of crushed groundnuts.
- Fill the side compartments with the tamarind-spiked green bananas and the vibrant kachumbari relish.
- Serve at room temperature to allow the spices to fully bloom.
