Introduction

Hujambo! Today’s lunch is a vibrant celebration of the Kenyan highlands meeting the Mombasa breeze. We are taking the humble, earthy njahi black bean and elevating it with the tang of tamarind and the creamy luxury of fresh coconut milk. I have paired it with al dente green bananas to provide a firm, satisfying bite that mimics the heartiness of the coast. It is a bowl that warms the soul while keeping your spirit light for the afternoon ahead.

  1. Heat a clay pot or heavy-based pan over medium heat and add a splash of coconut oil or water.
  2. Sauté the red onion until translucent, then stir in the garlic, ginger, and the slit pilipili chile until fragrant.
  3. Add the berbere spice and turmeric, toasting them for thirty seconds to release the oils.
  4. Toss in the sliced green bananas, stirring to coat them in the spice base.
  5. Pour in the coconut milk and tamarind paste, stirring gently to combine. Bring to a soft simmer.
  6. Add the pre-cooked njahi beans to the pot. Cover and let it simmer for about 15 minutes, or until the bananas are cooked through but still have a firm, al dente texture.
  7. Season with sea salt to taste and remove the pilipili chile if you prefer less heat.
  8. Ladle the stew into bowls and top with a generous spoonful of fresh kachumbari.
  9. Sprinkle the crushed roasted groundnuts and chopped cilantro over the top.
  10. Finish with a bright squeeze of fresh lime juice just before serving.
