Tuscan Orto Umami Bento Box

Introduction

In Italy, we have our own quiet tradition of eating from a box—the schiscetta that farmers carried into the terraced olive groves at dawn. When I look at the Japanese art of the bento, I see that very same reverence for balance and seasonal patience. Today, I wanted to gather the deepest umami notes of my Tuscan pantry: wild porcini steeped into chewy farro, king oyster mushrooms seared until they resemble caramelized sea scallops glistening with aged Modena balsamic, winter cavolo nero with creamy cannellini, and a crisp fennel agrodolce to cut through the richness. It is earthy, soulful, and a tribute to the beauty of thoughtful simplicity.

Instructions

  1. Strain the soaked porcini mushrooms through a fine sieve, reserving the rich broth, and finely chop the softened mushrooms.
  2. In a medium saucepan, combine the rinsed farro with the porcini broth and a pinch of sea salt, bring to a simmer, and cook until nutty and al dente, about 20 minutes; fold in the chopped porcini and toasted pine nuts.
  3. Heat one tablespoon of olive oil in a heavy skillet over medium heat with the rosemary sprig and crushed garlic clove, then lay the scored king oyster mushroom discs flat in the pan.
  4. Sear the mushroom medallions until deeply golden on both sides, then pour in the balsamic vinegar and tamari, tossing gently until a glossy, savory glaze coats every piece.
  5. In another pan, warm the remaining olive oil, sauté the chopped cavolo nero until tender with a splash of water, and fold in the cannellini beans with sea salt and cracked pepper.
  6. Whisk together the white wine vinegar, sugar, and a pinch of salt in a small bowl, then toss with the shaved fennel and radishes to create a bright agrodolce pickle.
  7. Pack the bento box into four neat quadrants: warm porcini farro, caramelized balsamic mushroom medallions, braised greens with white beans, and the vibrant crisp pickled fennel.

Pack this box with care and take your time when you sit down to eat. Just before taking your first bite, drizzle a thread of cold-pressed, peppery extra virgin olive oil over the warm farro and greens. It brings the earth, the wood, and the sun straight to your palate. Buon appetito!
