Today, I am bringing the spirit of the Sagra del Fungo Porcino directly to your table. We are making a dish that marries the golden vibrance of saffron with the deep, meaty soul of the forest. It is a celebration of the harvest, using only what the land provides: flour, water, ancient spice, and the king of the woods. This is slow food for a fast world, rooted in the hills I call home.

  1. On a clean wooden surface, mix the '00' and semolina flours into a mound. Create a deep well in the center.
  2. Pour the saffron water (and threads) and a tablespoon of olive oil into the well. Using a fork, gradually incorporate the flour from the edges until a shaggy dough forms.
  3. Knead the dough by hand for 10 minutes until it is smooth, elastic, and glowing gold. Wrap in a damp cloth and rest for 30 minutes.
  4. Roll the dough out thinly and cut into wide ribbons—about 2cm across—to create your pappardelle. Dust with semolina to prevent sticking.
  5. In a wide pan, heat a generous glug of olive oil over medium-high heat. Add the mushrooms in a single layer. Let them brown undisturbed for 3 minutes to develop a deep crust.
  6. Add the smashed garlic and thyme sprigs. Toss gently, then deglaze the pan with the white wine, scraping up the flavorful bits from the bottom.
  7. Stir in the crushed walnuts and a ladle of starchy pasta water to create a creamy, emulsified sauce. Remove the garlic cloves.
  8. Boil the pappardelle in salted water for only 2-3 minutes. Transfer them directly into the mushroom pan using tongs.
  9. Toss everything together over low heat, adding a splash more pasta water if needed. Finish with a heavy drizzle of your best new-press olive oil and cracked pepper.
