This board is a marriage of the old ways and the new: a fermented cashew cheese that mimics the sharp tang of a young pecorino, paired with a smoky lentil and walnut terrine that honors the rustic textures of our traditional salami. It is simple, generous, and best enjoyed as the sun begins to set over the cypresses.

  1. To make the cashew pecorino, drain and rinse the soaked cashews. Blend them with nutritional yeast, miso, lemon juice, and salt until completely smooth and creamy. Transfer to a small bowl lined with cheesecloth or parchment, and chill in the refrigerator for at least 4 hours to firm up.
  2. To prepare the lentil-walnut terrine, place the cooked lentils in a bowl and mash them slightly with a fork. Fold in the chopped walnuts, smoked paprika, crushed fennel seeds, salt, and pepper. Form the mixture into a tight log shape using parchment paper and chill alongside the cheese until firm.
  3. When ready to serve, find a beautiful wooden board. Place the cashew pecorino in the center and dust with a little black pepper.
  4. Slice the lentil-walnut terrine into rounds and arrange them nearby.
  5. Add the slices of fresh pear and grapes to provide a sweet contrast to the savory elements.
  6. Fill the remaining spaces with small bowls of olives and piles of torn focaccia.
  7. Garnish the board with fresh rosemary and thyme sprigs from the garden.
  8. Just before serving, drizzle the cheese and the bread generously with your best extra virgin olive oil.
